Sweet Potato & Goat Cheese Sandwich

- 2 Large Sweet Potatoes peeled and cut into 1/2-inch rounds
- 2 Tbsp. Olive Oil
- 1 tsp. Kosher Salt
- 1 Tribeca Oven Harvest Grain Baguette
- ¼ cup Goat Cheese
- 2 cups Baby Arugula
- 1 cup Pickled Red Onions
Preheat oven to 400°F. In a large bowl, toss sweet potatoes with oil, salt and pepper. Place on parchment paper lined baking sheet and bake until tender, about 25-30 minutes.
While potatoes are roasting, slice Tribeca Oven Harvest Grain Baguette longways. Crumble goat cheese on bottom half of bread. Top with roasted potatoes, arugula and onions. Cut into quarters and serve.
